Smoked Tofu Rancher's Pie

1 packet smoked tofu
1T sunflower oil
1 onion, diced
1 15 oz can baked beans
4 T ketchup
1T sweet chili sauce
3 oz water

Topping:
5 medium potatoes, peeled and cut into chunks
8 oz frozen sweet corn
2 T milk
1 oz butter
1 T chopped parsley


3 oz grated cheddar cheese

1.Boil potatoes until soft, drain and mash, adding remaining topping ingredients-except cheese.

2. Drain tofu and pat dry, then grate.

3. Fry onion and tofu in oil for about 5 minutes.

4. Add beans, ketchup, water and chili sauce, bring to boil and simmer 3-5 minutes.

Place tofu mixture in glass baking dish, top with potato and grated cheese.

Bake 375 for 20 minutes.
