Smoked Jalapeno Sausages in Corn Husks

I had a (cheap) 7 -pound boneless pork butt so I tripled (plus) the recipe, and made 2 dozen smoked sausages, and froze three 1 lb. packages of bulk sausage.

I tweeked the recipe to my liking - the jalapenos were mild, so I added more. I added more garlic, less black pepper and less cayenne. My family likes mild heat.

This was a lot of fun to do! The grinder attachment on my Kitchen Aide ground 7 pounds of pork butt (cut into strips for easy feeding in the hopper) in about 5 minutes!

I made two racks of wrapped sausages, smoked them to 165 over charcoal and cherry wood, in about 2 hours. Man, did they smell and taste great!

Served them with sauteed green peppers and onions on halved sub rolls, to make little sliders.

Absolutely delicious, and a heck of a lot less expensive than buying them!

:thumb: I watch Diners Drive-in and Dives all the time, and I sure missed this one. What a great idea to use the corn husks. Yours look great!
