You could also use the Barilla shelf stable tortellini. I keep a bag of that in the pantry for a quick meal.

Lora, you are SO right - this soup is frigging awesome! I added 2 cloves of minced garlic, but otherwise, no further seasoning was needed. LOVE it! I used fresh 3-cheese tortellini and a bag of baby spinach. So delicious!

It makes about 3 quarts and I know you froze some. Have you thawed any of the frozen soup yet? If so, how did it hold up?

John, this is so easy that you might consider it for your church events. Would be easy to do on the stovetop.
