Just in case you feel the need to do some slapping yourself...
(hey, its not MY phrase, I stole it from a country song...)
I made Mexican Meatballs..
1 lb ground beef.
Mix in:
2 TBSP cumin
2 TBSP chili powder
1 TBSP garlic powder
1/2 TBSP onion powder
1/2 TBSP seasoned salt
1 tsp oregano
1/2 tsp cinnamon
1 smidgen of chipotle chili powder (1/4 tsp or so)
1 habanero and 1 jalapeno, diced finely, seeds and
stems removed
1/2 onion, diced finely
For the sauce:
2 cups red enchilada sauce
1 can green chilis
Form into small meatballs and bake at 375 for about 15 minutes. (I use a 1 tsp measure for the meatballs).
Put meatballs into red enchilada sauce, add canned chilis, simmer for as long as you wish.
Assemble burrito with meatballs and some refried beans, Roll, cover with enchilada sauce, shredded cheddar cheese, tomatoes and chopped onion.
IF I had eggs in my possession, I was going to scramble them and put them inside. Over easy on the top would be good too, or maybe adding the meatballs as a kind of omelet....
I didn't find this burrito terribly spicy, but I've been told I have a high tolerance for chilis....
Enjoy!
And as always, feel free to add, subtract and otherwise personalize the recipe.
