Skillet Orzo, Sausage & Broccoli​


This is a satisfying one-pot meal that is high in fiber and protein. Make it low carb or keto friendly by using cauliflower rice instead of orzo ☺️

2 Tbsp olive oil
2-3 links of cooked Italian chicken sausage, such as Aidells brand sliced 1/4 inch
1/2 chopped onion
3-4 cloves chopped fresh garlic
4 c fresh broccoli florets (frozen makes it mushy so it’s not recommended)
1 c regular, whole grain orzo, or cauliflower rice
2 1/2 c low sodium chicken broth
1/4 tsp kosher salt
1/4 tsp red pepper flakes
1 tsp dried Italian seasoning
1/4 c grated Parmesan

In a large skillet (with lid) heat olive oil on medium high and add sliced sausages and onion until sausage is browned and onion begins to get soft. Add the chopped garlic and dry orzo. Stir until garlic is fragrant and orzo is beginning to toast.
Add the red pepper flakes, Italian seasoning and salt, stir, then pour in the chicken broth. Add the broccoli, stir to combine. Bring to a boil. Reduce heat to medium low. Cover the skillet with the lid and simmer 15 - 20 minutes or until orzo is tender. Remove lid and cook down the rest of the broth. Add Parmesan cheese and combine until cheese is melted into mixture. Let sit for 5 minutes then serve.
