Here is my recipe for making shrimp stuffed portabella mushrooms.
Take some nice fresh portabella mushrooms and remove the gills. Rough chop some red peppers, Roma tomatoes, fresh basil, and some fresh mozzarella cheese. Peel and press several cloves of garlic to taste. Chop 3-4 shrimp into pieces. Leave several shrimp whole to add on top.
Sauté the red peppers and garlic in a small amount of unsalted butter until tender.
Add the chopped basil and Roma tomatoes.
Add the chopped shrimp and sauté until they just turn pink.
Add the filling to the mushrooms add several pieces of the fresh mozzarella and top with a whole shrimp.
Grill over medium high heat until the cheese is melted.
Served with honey glazed boneless pork chops, vinegar marinated asparagus and some au gratin potatoes.
