1 lb of shrimp boiled in Old Bay, shelled, rough chopped, and cooled
1 cup of celery, medium chopped
2 hard boiled eggs, chopped
1/4 cup salad olives with pimientos, chopped
2 T red onion, minced
The dressing for this is a basic Louis dressing:
1 cup mayonnaise
2 T chili sauce
1 T ketchup
1 T worcestershire sauce
1 T A-1 steak sauce
lemon juice to taste
garnish - chopped green onions
Mix the shrimp, celery, eggs, olives, and onions together. In a separate bowl, mix the ingredients for the dressing. Add the dressing to the shrimp mixture and chill thoroughly. You can use as much or as little of the dressing as you like. To serve, spoon the shrimp salad onto a bed of greens. This is great served with a side of fresh tomatoes, cucumbers, and a quartered hard-boiled egg.
