Shaffer Style Tomato Soup

I loved this soup. Paul thought it was tomatoey... if you make it..be sure to let me know what you think.

1 tablespoon olive oil
1 onion chopped very finely
1 shredded carrot
3 stalks of celery
4 tomatoes chopped
1 teaspoon basil
3 cups chicken broth
salt and pepper

Heat the oil
saute your veggies Celery, onion and carrots until they are nice and soft.

Then add your tomatoes and your basil.

simmer just until the tomatoes have soften up a little.

Let the soup cool down a little and then put a little at a time in your blender and blend until it is at the thickness that you'd like.

Return to the pan and add broth.

Heat up and serve!

Easy peasy!
