Seafood Casserole

1/2 lb each - cooked langostine tails, crab, raw shrimp and bay scallops
1 cup butter
2/3 cup dry white wine or seafood stock
2 Tbsp fresh lemon juice
2 Tbsp chopped fresh parsley
1 Tbsp each minced shallots and fresh garlicw
1 tsp thyme
3/4 c each of finely crushed Ritz crackers and Panko bread crumbs

Preheat oven to 375 degrees
Melt butter in a medium fry pan and add shallots, garlic, parsley and thyme. Simmer on low for 2 minutes. Add wine and lemon juice. Simmer for 3 minutes.

In a separate bowl, combine crackers and Panko.

Coat a 10-11" baking dish with olive oil. Evenly spread all the seafood in the baking dish, then top with the cracker mix. Slowly pour butter wine mixer over the top of the casserole.
Bake uncovered for 20-25 minutes until lightly browned and bubbly.
