Seafood Casserole - from Friendly Feasts Act II
1 1/2 pounds boneless fish
2 cans cream of celery soup (condensed)
1/2 cup dry vermouth or sherry
3/4 cup mayonnaise
1/2 cup light cream or half & half
Worcestershire sauce
1 pound shrimp, cleaned
1/2 pound scallops
Parmesan cheese, grated, or buttered bread crumbs
Cook fish briefly and cut into pieces. Combine soup. vermouth. mayonnaise and cream and stir into a smooth sauce. Season lightly with Worcestershire. Add all seafood and place in a casserole. Top with Parmesan cheese or crumbs. Bake at 350 for 1/2 - 3/4 hours, until light brown and bubbly.
Yield: 8 servings.
