Sausage & Leek Supper

Sausage & leek supper

700g potatoes
25g margarine
450g sausages, plain are best – you can use vegetarian
1 onion
2/3 leeks
40g flour
450ml milk
100g grated cheese (preferably smoked),
1 packet plain crisps

1 Heat oven to 200°C / 400 °F / Gas Mark 6
2 Peel and slice potatoes. Cook in boiling water for 5-10 minutes and then drain.
3 Peel and slice the onion. Clean and slice the leeks. Slice the sausages
4 Melt butter in a pan, add sausages and cook for 5 minutes.
5 Add onions and leeks and cook for another 5 minutes.
6 Add flour, cook for a minute, and then slowly add the milk.
7 Heat, stirring continuously, until the sauce thickens, boils and is smooth. Remove from heat
8 Add ¾ of the cheese, and stir until melted.
9 Transfer into an ovenproof dish. Arrange the potato slices on top.
10 Crush the crisps, and mix with the remaining cheese. Sprinkle over the top
11 Bake for 30 minutes until browned
