Sausage and Pasta Toss

1 tablespoon olive oil
1 pound sausage (I've used either Italian or Kielbasa....I slice mine.)
28-ounce can diced tomatoes
2 teaspoons dried oregano
12-ounce jar roasted red peppers, drained and cut into 1/4-inch-thick strips
1 clove minced garlic
1 pound penne, cooked, drained, kept warm
1/4 cup fresh basil, finely sliced
Freshly grated Parmesan cheese, to taste

Heat olive oil in heavy large skillet over medium-high heat. Add sausage;
saute until browned, breaking up with fork, about 4 minutes. Add diced tomatoes, dried oregano, garlic and roasted red peppers. Cook for 2 minutes or until thoroughly heated, stirring frequently. Toss with penne and basil, thinly sliced. Top with freshly grated Parmesan cheese. Makes 4 to 6 servings.

I made this tonight, Barb, and it was delicious!

I used some homemade hot bulk sausage that my Italian neighbors made, and cavatappi instead of penne.

What made it different from the regular American Chop Suey was the mild sweetness of the roasted red peppers and the basil. REALLY good!

Thanks for trying this Q. I'm really glad you tried it and liked it! The homemade sausage had to take it over the top.

Here's a picture. I used cavatappi instead of penne. And I used bulk hot Italian sausage, which you can't see here, because it's all scrambled. But it was GOOD!

Another thing I like about this dish is the liberal use of fresh basil. I tossed some in while it was simmering, and then sprinkled more on top after it was plated.

A simple, delicious twist on American Chop Suey!
