Rosemary Chicken with Cherry Tomato Sauce

This was based on a Weight Watcher's recipe and is delicious! Tried it for the first time tonight, but it's a keeper!

Rosemary Chicken with Cherry Tomato Sauce

3-4 boneless, skinless chicken breasts
1 T. each, chopped rosemary, thyme and oregano
S&P
2 teas. olive oil
1 large shallot, minced (this makes the dish!)
2 cloves garlic, minced
1 pint cherry tomatoes, halved
1/4 cup chicken broth
1/4 cup basil, chopped

Place chicken breasts between plastic wrap and pound to even out thickness.

Sprinkle chicken with salt, pepper, and all herbs except basil. Heat oil and cook chicken about 4 minutes per side. Remove chicken to platter and keep warm.

To the pan, add shallot and garlic. Cook, stirring, until soft, about 3 minutes. Add chicken broth and tomatoes. Cook until tomatoes soften, another few minutes. Add basil.

Pour over chicken.
