3 bell peppers,halved,seeded,roasted
1/3 cup olive oil,divided
1/2 cup finely chopped onions
2 cloves garlic,minced
1 cup cooked white beans
1 tsp lemon juice-fresh
1/2 tsp salt
1/2 tsp dried basil
1/4 tsp fresh black pepper
1 egg yolk
2 1/2 cup fresh bread crumbs,divided
1/4 cup chopped parsley
roast peppers on a baking sheet under the broiler. then cut into 2 inch pieces and set aside.
in a large skillet,heat 2 tbls of the oil over medium heat. add onions and saute for 2 minutes. add garlic and saute until onions are tender, about 2 minutes, set aside
in a large bowl, combine half the roasted peppers with the white beans,lemon juice,salt,basil,black pepper and cayenne pepper.grind or mix with a mixture until sausage consistency.
add remaining roasted peppers,egg yold,1 1/2 cups bread crumbs and parsley to a mixing bowl to the other ingredients and beat until just combined.
form into 8 1 inch thick patties and coat with remaining bread crumbs
in a large skillet,heat half the remaining oil over medium-high heat. add 4 of the patties and cook,flipping once for 3 to 4 minutes per side or until brown on both sides. repeat with remaining patties add more oil if needed.
serve hot with a basil aioli or similiar sauce
