Costolette di Maiale alla Pizzaiola
(Braised pork chops w/tomato & garlic sauce)
I've made this recipe for YEARS & it's always a hit! Enjoy!
4 Tbsp extra virgin olive oil
6 pork loin chops, about 1 to 1 1/2" thick
1-2 cloves of garlic, minced
1/2 tsp dried oregano, crushed
1/4 tsp dried thyme, crushed
1 small dried bay leaf
1/2 tsp salt
1/2 cup dry red wine
1 small can of crushed tomatoes
1 Tbsp tomato paste
1 1/2 c sliced green peppers into 1/4" strips
1/2 lb sliced mushrooms (optional)
In a 10-12" skillet, heat the olive oil. Brown the chops for 2-3 min on each side, remove and set aside. Add garlic, oregano, thyme, bay leaf & salt to the pan, stirring constantly. Add the green peppers and cook until just beginning to soften. Add the wine and reduce by half then pour in the tomatoes & tomato paste. Stir until well combined then add the pork chops back into the skillet. Baste the chops with the sauce, cover and reduce heat and simmer on low for 40 minutes, basting once or twice.
Serve with polenta or your favorite pasta
