Ok, that’s it, Battle Eggplant is Ooooo-vuuuuhhhhhhhhh!

And what a remarkable battle it has been. Who knew there were so many ways to use this often overlooked and exotic vegetable….that some call a fruit. Although, it does taste a bit like a fruit.

But I digress…..on to the results!

Those are impressive indeed!
Sadly ?, eggplant is one of the few foods I just can't wrap my
tastebuds around.
So I will be hiding this thread from my wife, who adores the stuff, LOLOL!
 
Lucky - are you able to share the recipe for the fritters, I've one more left and that sounds good.
 
The eggplant is in the nightshade family....and offers almost no nutritional value!

Wow, Vera is right. For one cup of cubed eggplant (82 g), there is only 20 Calories coming from a total of 4.7g of Carbs and 0.2g of fat.

To be as big as it is, it's practically non-existent! :lol:

Yes,I am Mini, and happy to........they were great with sifted powdered sugar..........

EGGPLANT BEIGNETS

1 Lg. eggplant
1 c. sugar
2 c. flour (or more).............The warden DID use more, to stiffen the batter a little better......
2 eggs, beaten
4 tsp baking powder (rounded)
2 pinches salt

Peel and Cube eggplant; boil till softened
In a large bowl, mash eggplant.
Mix in all other ingredients and spoon from teaspoon into deep fryer, oil at 350.
Fry until brown, turning once.

Sift powdered sugar over them and enjoy

Yes, those fritters look really really good as did the smothered egg plant dish (is there a recipe for that posted on here? Would love it!).

I never actually had eggplant until the wife introduced me to it, and at first I did not much care for it. Then I tried Eggplant Parmesan in a restaurant and realized when cooked right it was actually good! LOL! The wife's favorite way to make it is still a rag out. No idea where the name came from, but basically cubed eggplant seasoned and baked in the oven.
 
i must admit i was lucky enough to have those fritters and the recipe is great. my daughter who dosen't like eggplant ate those like they were candy.... whoever trys this will be surprised......

Great job everyone!!

I did buy some eggplant but alas I never got around to making my recipe. It will probably be on the menu soon....
