I would love to see this one done again the week of Thanksgiving to see how everyone does their bird differently as well as what they do with the leftovers

Good idea! Maybe for the week of Thanksgiving we'll have a special "Thanksgiving Battle" where everyone can showcase their Thanksgiving specialties. That should prove nice. And it would be a great resource for anyone planning a Thanksgiving feast.
