Several of us have talked about quinoa (pronounced "Keen -WAH") how healthy it is, how much lower on the glycemic index it is than rice or pasta.
I just made my first batch of whole grain quinoa tonight, and used it in the salad recipe on the back of the package (Red Mill brand).
EXCELLENT! I could eat this stuff all day!
It's a blank pallet for whatever flavors you like and/or have around your house.
I happen to have the scallions, fresh parsley, basil and mint that the recipe called for, so that's what I used. Recipe also calls for a clove of minced garlic, and that would be great, too, but I used garlic powder this time (taking it to work for lunch tomorrow).
Here's the recipe:
Quinoa Salad
2 cups water
1 cup quinoa
1/2 cup lemon juice
1/4 cup good olive oil
1 clove garlic, minced
chopped scallions
minced fresh parsley, basil, and mint

Bring water to a boil. Add quinoa. Cook over medium heat, covered, for 12 minutes or until most of the water is absorbed. Take the pot off the heat, fluff the quinoa, and let it sit, covered, for 15 minutes.
Mix half cup lemon juice with 1/4 cup good olive oil. Chop up some scallions, parsley, basil, mint, whatever you like, and mix it in. Add salt and pepper (I added some garlic powder, but you can mince a fresh clove of garlic if you like).
Delicious!
I can see adding a minced jalapeno, cucumbers, tomatoes .... whatever I have in the garden or in the fridge.
I did a search on "quinoa" before I posted, and saw a recipe that lifesaver posted that contained radishes and fennel.
And Chocolatemousse asked if the same seasonings used in rice and orzo can be used in quinoa .... YES!!
