Queso Flameado Con Chorizo Quesadillas

this is inspired by the dish queso flameado con chorizo which translates to flaming cheese

this is for 1 quesadilla

2 8' flour tortillas
1/4 cup of fried chorizo
2 tablespoons salsa
1 small green onion sliced thinly-tops saved for flavor and garnish
Asadero cheese or you can use a variety of white melting cheese such as jack,mozza or provalone

assemble the quesadilla and fry until cooked

and no meal like this is complete without a nice frosty beverage..lol

Ooooh, I love queso flameado! Luckily, it's very easy for me to get great chorizo at any store here. But I usually just have it in a bowl and smear it on flour tortillas. I will definitely do this quesadilla twist next time, Bams. Thanks.

queso flameado's are one of my favorite... i also like them with shrimp or mushrooms in them...

fell in love with this really bad for you dish in Houston

you also live close to one of my favorite cantina's... cant remember the name but its right beside the motel 6 on WW White Road in San Antonio...there is also another place by the other motel/hotel that makes a gread country fried steak
