QSis' Golumpki (stuffed cabbage rolls)

This recipe is based on my Aunt Stella's. If you do an NCT search on "stuffed cabbage", you will see other similar recipes including those from JoeV and homecook, both of Polish descent. Many Poles and Polish-Americans top their golumpki with tomato soup or tomato sauce. My family never did.

Golumpki - small batch, makes 4

Small head of cabbage
1/2 pound of ground pork (or combo of ground pork and ground beef)
1/2 cup of cooked rice
1/2 onion, diced
1/4 cup rehydrated dried wild mushrooms, minced

Strips of salt pork

Bring large pot of water to boiling. Add a couple of splashes of cider vinegar to pot. Remove any dirty outer cabbage leaves and core cabbage. Drop cabbage into water and boil for 5 minutes.

Meanwhile, fry onions till golden brown, then set aside to cool. Mix fried onions into the rest of the filling.

Remove 4 largest leaves from cabbage. Place a quarter of the filling on each leaf on the core side, then roll up, burrito style.

Chop up the remainder of the cabbage and place it on the bottom of your baking pan. Add a couple of splashes of vinegar, dill if you have it, more chopped onion and chopped rehydrated mushrooms (optional). Place the cabbage rolls on top of the chopped cabbage, seam side down. Place a strip of raw salt pork on top of each roll. Cover and bake at 350 for an hour. Then remove cover and broil until the tops are brown.

Serve rolls on top of the extra cabbage.

Sounds and looks wonderful. You mix the raw pork/beef (or do you cook it then mix with the rice) with the cooked rice?
