Preserving mushrooms

Which is the best way to preserve chanterelle mushrooms? Dry saute then freeze or drying? It's the last bit of the bumper crop for this year and I just bought a few pounds in order to use them over the winter. Any suggestions??

Well, my Polish aunts only ate them fresh or dried them, RM.

But I think chanterelles are wasted when dried compared to the Bolete varieties, as the flavor of the chanterelles is much milder and more delicate.

I've never experienced them frozen, but I might try them that way.

Do some of both?

I haven't preserved or frozen mushrooms, but another idea is to prepare dishes (that could be frozen), or use them in some of your Thanksgiving dishes, i.e.

Mushroom soup
dressing/stuffing
Gravy
In a vegetable side dish
mushroom strudel
scalloped potatoes w/ gruyere

Appetizers:
Mushroom pate
I posted a recipe for sour cream & mushroom croissants. If you're interested try a search here.
