pork gravy

Hi all,
I have 3 thin sliced pork chops. I was thinking of frying them.. First dredging in seasoned flour, pepper, maybe tad paprika, and some herb de provence.; and frying in some olive oil for several minutes on each side...My question is gravy. How do I make it? was thinking of adding some chicken broth to drippings-not much of that though, and some extra seasonings, with a little flour? sounds ok? Peeps gravy always look awesome--she is the gravy Queeen:applause:...

Take the chops out, put some flour in the leftover grease, stir, cook a bit (it should look like dirty, wet sand), then add your broth. Whisk.
I also like a milk gravy with porkchops. I usually don't use olive oil when I'm going to be making gravy, though. I also like to use poultry seasoning (thyme, sage) when making chops-n-gravy.
 
Sorry to be late on the reply. Thank you for the compliment cg! I add a little butter to the pan drippings if needed and flour salt, ground pepper and poultry seasoning. Stir about 1 minute then whisk (to avoid lumps) in chicken broth till desired thickness, Stir and cook about 2 minutes, taste correct seasoning and add more broth if needed. I sometimes add ground porcini mushrooms and a dash of gravy master if it needs a flavor kick. Sometimes I add sliced mushrooms and onions.
 
I fry in bacon drippings or vegetable oil, remove the chops and add flour. Then I stir and cook the flour for a few minutes until browned. I add milk and a little sage to the mixture and cook to the desired thickness. Salt and pepper of course.
 
yup, thanks all---did it today----pan drippings, veggie oil and butter, seasoned flour and some milk, pepper, used herb de provence (not poultry seasoning in house) and a tad salt...came out good! thanks---just have to improve on it a little...thank you!
