Personal Portobello Pizzas

Ingredients

1 large portobello mushroom, stem removed
1 tablespoon spaghetti sauce <or pesto>
1/2 cup mozzarella cheese
1/2 tablespoon sliced black olives
4 slices pepperoni, or sausage or diced, grilled chicken breast
1 clove garlic, chopped

Directions

Preheat the oven to 375 degrees F (190 degrees C). Lightly brush olive oil on the mushroom caps. Place the mushroom on a baking sheet, and bake for 5 minutes in the preheated oven. Remove from the oven, and spread spaghetti sauce in the cup of the cap. Top with cheese, olives, pepperoni and garlic.
Bake for an additional 20 minutes, or until cheese is melted and golden.

It would be a terrific dish for South Beach, or, would be wonderful with garlic bread or pasta on the side!

Oh that does sound good! I would have never thought to do something like that even though I love mushrooms on my pizza.

I have started doing mushrooms on the grill easy and delicious. All i do is brush with oil, i use the baby bellas. Buy as big as i can find. Take off the grill add a little butter and fresh herbs.
