1 lb. penne pasta
6 chicken breasts, cut into strips
1 cup flour
1/4 cup olive oil
1/2 tsp. minced garlic (I add more)
1 7.5 oz. jar Italian style roasted peppers, julienned
1 bunch of asparagus, blanched
1 T. basil, chopped
salt and pepper
Parmesan cheese
Cook pasta as directed. Coat chicken strips in flour. In a hot skillet saute chicken in olive oil for 3 minutes. Add garlic, roasted red peppers, asparagus and basil. Add salt and pepper to taste. Cook for another 3-5 minutes. Toss with the cooked pasta and top with parmesan cheese.
