Peep's Smoked Chicken
Favorite Chicken parts
Season chicken with:
Trader Joe's African smoke
Favorite All Purpose Seasoning
Salt
Ground pepper
Smoke chips -
Apple wood
Hickory
Favorite BBQ sauce/Glaze
I used my Nordic Ware stovetop smoker
Place smoking chips in base of smoker.
Place empty drip pan in base over chips.
Insert cooking plate and place chicken on plate.
Cover and heat on high till smoke starts to escape and temperature reaches 250°F.
Smoke at 250°F for 30 minutes to internal temperature of 175°F
Place pieces on baking sheet bottom side up.
Baste with BBQ sauce/glaze.
Place under broiler for 5 minutes or until browned slightly.
Turn pieces over (top side up) and broil for 2 minutes to dry skin and crisp a bit.
Baste with BBQ sauce/glaze and place under broiler to brown and develop "bark" approximately 3-5 minutes.
