Peep's Instant Pot Peach Compote

Yields 5 (8 oz.) mason jars

3 lb. frozen sliced peaches (I used Trader Joe's)
3/4 C. honey (I used Trader Joe's Mostly Mesquite Honey)
2 TBSP. brown sugar
1 lemon, juiced (≈ 1/4 C.)
1 tsp. vanilla extract
1/8 tsp. Ground cinnamon
1/8 tsp. Ground nutmeg

Add peaches, lemon juice, honey and brown sugar to the inner pot.
Lock on lid and set Valve to Sealing.
Select Manual and set (+/-) to 1 minute.
(Approximately 20 minutes to come to pressure.)
When cook cycle is finished (beep sounds), allow a natural pressure release (NPR), when pin drops remove lid.
(Approximately 15 minutes to fully release pressure)
Select Cancel button.
Carefully remove lid.

Select Sauté mode and Adjust to “Less”
Stirring occasionally, sauté until most of the liquid has evaporated and the compote has thickened.
Select Cancel button.

Stir in the vanilla extract, nutmeg and cinnamon.
You can use an immersion blender for a smoother consistency or leave it chunky.
Ladle into mason jars and allow to cool about 30 minutes before refrigerating.
