Peep's Garlic Parmesan Knots

1 lb. dough

1/2 C. + 3 TBSP. Water (105 °F - 115 °F)
1 TBSP. Butter
2 C. Flour + 3 TBSP.
(2 TBSP. Wheat Germ - Optional)
1 TBSP. Sugar (or honey)
1 tsp. Salt
1 tsp. Active Dry Yeast

With Bread machine:

Place into bread machine pan in this order:
Water and butter
Flour and wheat germ, spread evenly over water
Sprinkle sugar over flour
Salt in one corner
Make shallow well away from salt and add the yeast

Select dough cycle.

Without Bread Machine:

Prepare dough:
In a large bowl or stand mixer add the yeast, water and a pinch of the sugar (or honey). Allow to rest for 5-10 minutes until proofed.
Add remaining sugar or honey, salt, oil, and flour (and wheat germ). Run mixer until the dough begins to pull away from the sides of the bowl. The dough should be smooth and elastic, and slightly stick to a clean finger, but not be overly sticky. Add a little more flour, if needed.

Knead the dough:
Mix the dough for 4-5 minutes on medium speed (or knead with your hands on a lightly floured surface, for 5-8 minutes).

No mixer - Just mix it in a bowl by hand but knead longer, about 150 turns.

First Rise:
Grease a large bowl with oil or cooking spray and place the dough inside, turning to coat. Cover with a dish towel or plastic wrap and allow to rise in a warm place* until doubled in size, about 1 1/2 hours.

After first rise continue with directions below at *.

Garlic Parmesan Topping:

5 TBSP. Butter
1 - 1/2 TBSP. Fresh garlic, minced - or To Taste
1 - 1/2 TBSP. Fresh parsley, chopped fine - or To Taste
Salt - To Taste
Ground peppercorns - To Taste
Fresh grated Parmigiano Reggiano & Pecorino Romano cheeses

Preheat oven to 400 °F.
Melt butter then add garlic, parsley, salt & pepper; set aside.

When Bread Machine dough cycle is finished:
*Sprinkle work surface lightly with flour and turn out dough.
Cut dough into equal parts.
Roll each piece into a rope and tie into knots.
Cover lightly and allow to rest/rise for 30 min.
Brush knots with half the butter mixture.
Bake at 400 °F, 18 - 20 min. or until golden brown.
Remove from oven and brush with remaining butter mixture and sprinkle with grated cheese.
