Peep's Breaded Chicken Cutlet

Thin chicken breast - as many as needed

Seasoned flour:
2 C. Flour
Ground peppercorns - To Taste
Salt - To Taste
All-purpose seasoning (I use my house blend seasoning) OR Dry Adobo seasoning blend (I use Goya) - To Taste - Optional

Mix all ingredients in a tray or bowl. Taste and adjust to your liking if needed.

Egg wash:
1 Egg
1 TBSP. Milk, Half & Half, Cream, or Water

Crumb Breading:
2 C. Plain Bread crumbs
1 tsp. Garlic powder
1 tsp. Onion powder
1 tsp. Salt
1/2 tsp. Ground black pepper
1 tsp. Dry oregano
1 tsp. Dry basil
1 tsp. Dry parsley
1/4 C. Grated Romano and Parmesan cheeses
Ground hot pepper flakes or cayenne - To Taste - Optional
1 tsp. All-purpose seasoning (I use my house blend seasoning) OR Dry Adobo seasoning blend (I use Goya) - To Taste - Optional
Accent/MSG - To Taste - Optional

Mix all ingredients in a tray or bowl. Taste and adjust to your liking if needed.

Oil of choice for frying

In deep heavy pan (I use cast-iron); heat oil (oil - ≈ 1" - 2 "deep) to 350℉
Dredge in flour, then dip in egg wash then crumbs.
Fry in oil till golden brown then flip and repeat on other side.
Internal temperature should be at least 165℉.
Remove and drain on paper towels.

You mentioned using thin chicken breasts—do you usually slice them thinner yourself, or just flatten them with a meat mallet?

They are pretty thin. I don't pound/flatten them.

I use these or thin chicken cutlets.
