Pea and Bacon Salad

This salad was inspired by a post on another forum, by StirBlue.

DELICIOUS!

She used small macaroni and hard boiled eggs in it. I omitted the pasta and HB eggs, but I'm sure the eggs would be wonderful!

Pea and Bacon Salad (inspired by StirBlue)

Bag of frozen peas
chopped boiled eggs
small macaroni (optional)
small cubed cheese (I used feta)
crumbled bacon
scallions
creamy dressing (I used Ranch)

 
Made this again last weekend.

SO good, even without the pasta!

finally, a recipe that might get me to eat peas (the big, dented, army kind) again. thanks, qsis!!

with bacon in it, there certainly could be peas on earth...
 
My former MIL used to make it all the time.
I've never made this version but can get one close enough at the deli at Chief's Supermarket.
It's got red onion in it and cheddar cheese chunks usually.

There is another supermarket that makes it, they use Velveeta chunks and something that resembles ham (ffs, I hope it's NOT Spam? lol)

Think I'll most definitely try Lee's recipe. Cause I want the best I can get.:flowers:
 
Thanks, guys. I put HB eggs in the second version, along with Garlic and Herb cheddar cheese. Loved it!

This post never resurfaced for me. I guess it pays to scroll through the forum and check dates on the last post.
Anyway... that looks delicious, Lee. I wish I had that bowl in front of me right now.
Is this served warm, cold? I could eat it either way.
