Passover Carrot Cake Bars
This recipe came from a Beth Am Sisterhood Passover Institute from the 1970s. This Temple is no longer in existence and merged with another one. It is a recipe that my family always makes for Passover.
Ingredients:
5 egg yolks
1 cup sugar (or less)
½ teaspoon salt
1 teaspoon vanilla
½ cup matzoh cake meal
5 egg whites
1 teaspoon cinnamon
1 cup grated carrot
1 cup chopped nuts
Directions:
Preheat oven to 350 degrees. Beat egg yolks until light and lemon-colored. Beat in sugar, salt and vanilla. Then beat in the cake meal and cinnamon. Stir in the carrots and the nuts. Beat the egg whites until stiff but not dry (peaks stand up). Fold whites into the egg yolk mixture. Place in 13” x 9’’ x 2” pan. Bake in preheated oven 25-30 minutes, or until done. Cool, then cut into bars.
