DW cooked this tonight. Using one of my trivet and skillet methods, she came up with this. And it rocks!
Easy Oven Skillet BBQ Chicken
Ingredients
2 stalks celery, coarsely chopped
1 small onion, coarsely chopped
1 bay leaf
1 cup chicken broth
1/2 cup beer
6 chicken thighs
1 cup favorite BBQ sauce
Procedure
Heat oven to 400 degrees. Season thighs with salt, pepper, and garlic powder.
In a 9” CI skillet, add celery, onion, bay leaf, broth and beer. Place a trivet over this mixture. On trivet, add chicken thighs. Bake for 25 minutes.
At this point, sauce the thighs liberally with your favorite BBQ sauce (Sweet Baby Ray’s is a good choice). Return to oven and bake another 10 minutes to finish and set the sauce.
The liquid in the bottom keeps the fats from making a mess of the pan, and also offer a moist and flavorful environment for the cooking chicken. Also, putting it on a trivet keeps the chicken from boiling and it stays crispy. When it’s done, it looks like this.
