Oven Rings

30 Nabisco Premium saltine crackers
2 c kettle cooked cracked pepper potato chips

2 medium Vidalia onions, cut into rings 1/2" thick

1/4 c flour
1/2 c buttermilk
1 egg
1/4 t cayenne pepper
--
1/4 c flour in a large deep dish

3 T corn oil

Process crackers and chips using 10 quick pulses in food processor-place in shallow dish.


In a large bowl combine buttermilk with 1/4 c flour, cayenne and egg, mixing well to form the batter.

Dip each ring in flour, then in buttermilk batter, then finally cracker and chip crumbs.

Heat corn oil on baking sheet in 450 degree oven until hot.

Place rings on hot oiled sheet, baking 8 minutes per side.
 
I love onion rings but hate all the mess, then standing there frying them in batches. This sounds like a 50% decrease in PIA-ness.

Would someone PLEASE try it and post a picture and let me know if it's worth the 50%???

Sounds good Sass. I don't like putting anything battered in my deep fryer, so this is perfect. I'll have to give it a go with a couple Mayans, or 1015s, or other sweet onion until the real thing comes out again.
 
I'll be making them on either Monday or Tuesday next week... with pics, along with a steak and asparagus :D

Note: you really do need to drop the rings in flour before the buttermilk batter.
I almost did a short cut and glad I didn't.
Here are a few test kitchen results, don't know what went wrong, but mine turned out damn near poifect lol

Now you've got to try them Lee :-)
I think I could have left them in the oven a bit longer for more browning, but I got impatient lol
They came out crispy and delicious, thank God, or else I'd never had the balls to post a pic!:yum:
 
I bought some kettle chips today to make these onion rings. I just opened them a few minutes ago and am hoping that I have enough left after all the nibbling to make the rings . Those things are goooood :brows:! I don't have vidalias, just using regular yellow onions.
 
Yum! I can see these on a burger too. I'll be doing them again. Next time I'll try to get my coating a lttle bit better distributed. Thanks, Sass :thumb:.
