This was wicked easy and we both liked it! I made it in a soup pot. Very mushroomy, and would be excellent without chicken as a vegetarian dish.

Made this again. Not pretty, but oh SO easy and delicious!
Used an 8 oz box of mushrooms and a 9 oz bag of baby spinach. The recipe is forgiving, so use what you have.
