The tribe has spoken and our newest Spotlight is Mama! Many thanks for giving us this opportunity to know you better.


Tell us a little about yourself - your family or household, kids, pets, occupation, etc.

I was a little wild in my younger days. After high school, I started college, went one semester and dropped out because, at that time, life was a party. By the age of 21, I found myself pregnant and unmarried. I had a son (Jason). I loved him dearly but he died of crib death when he was just three weeks old. It took me quite a while to get to where I could even talk about it. Shortly after losing my son, I met my future husband. He was a little older than myself...15 years...but age is just a number. That was 29 years ago. He had a daughter from a previous marriage whose birthday just happened to be the same day as Jason's just 10 years apart...I figured it was God's way of easing the pain. After about a year, I became pregnant again and had my DD. She's 27 now and we've been married for 26 years. She was at our wedding! She's my pride and joy! She is a high school math teacher and a softball and lacrosse coach and as many of you know she recently got married to a wonderful man, bought a house and started a life of her own.

My step daughter moved in with us when she was 11. We had a pretty rocky relationship at first but things are great now. She is 39 and is married too. She gave me 2 beautiful granddaughters and they each decided to to make me a great-grandmother at a very young age by having 3 beautiful daughters of their own. The oldest granddaughter is married to an Army man who will be deployed to Iraq for his second tour of duty in March.

I have a beautiful border collie who is 3 1/2 years old and we recently took in an adult white German Shepherd who had been abandoned. We have several cats...too many to count really. We feed all of the strays that come up and get all of the females fixed. Surprisingly, they still want to hang around. :lol:

I've worked in retail, I've been a waitress, a restaurant manager and my most recent public job was in the True Value Hardware Distribution Center. I worked there for 10 years. I developed carpal tunnel syndrome while working there and had to have surgery. Although the surgery was pretty successful, I was unable to return to what I had been doing so we reached a settlement and parted ways. I decided that I had had enough of working for someone else so I decided to strike out on my own. Now I build and maintain websites. I have three. Mamas Southern Cooking, Americas Best Places To Retire, and my newest site is A Guide To Frugal Living that is just in the beginning stages. I just finished writing and publishing my first ecookbook, Tried and True Recipes From Mamas Kitchen. I don't make a whole lot of money yet but my business is growing and I do enjoy what I do.

What part of the world do you live in?

I live just south of Atlanta in Stockbridge.

How did you find the NCT community?

Like many others I was (still am) a member of DC. I enjoyed many of the people there and their colorful posts. I noticed that many of my favorite members were dropping like flies...it kept saying they were banned. When I asked about what was going on, I was eventually told that they left for another forum. Since Google is my friend, I googled "talk about Discuss Cooking" and lo and behold on the first page was NCT!

Do you have any hobbies besides cooking?

I really don't have any hobbies. My websites keep me pretty busy.

How and why did you choose your Username? What does it mean?

My DD has been playing softball from the time she was 10 all the way through college. I would make goodies and cook for the team whenever possible and play surrogate mother to any kid who needed one so they all started calling me Mama Coffey.

Give us 5 words that describe you.

Caring, Giving, Honest, Humble and, believe it or not Shy

Tell us one thing about yourself that people would be surprised to know.

We were dirt poor when I was growing up. We didn't have indoor plumbing until I was 11.

How and at what age did you start cooking?

I started helping my mama in the kitchen longer ago than I can remember. I think I was about 8 when she let me cook supper by myself for the first time.

Do you have a signature dish or one that you make especially well?

Cornbread! :lol:

What is your favorite spice?

Garlic powder

What is your favorite restaurant meal?

This is going to sound strange but it would have to be Roast Beef with mashed potatoes, turnip greens and pinto beans at Cracker Barrel.

What would your last meal be if you could choose anything at all?

I would have to try Kobe beef with loaded mashed potatoes, and a salad from Olive Garden. Cheesecake for dessert.

If you could host a dinner party with 6 well-known guests, living or dead, who would they be and what would you serve?

Jesus, the Apostle Paul, Thomas Jefferson, Glenn Beck and Oprah...what a conversation we would have! I'd make pizza dough and we would all make our own individual pizzas...I'd have to ask UnConundrum if I could borrow his pizza oven though.

If you were going to be stranded on an isolated island for a year, what 6 foods would you want to have to readily available?

I assume there would be seafood so...BUTTER, cornbread, pineapple, chicken, mustard greens and potatoes.

Who would you most like to prepare a meal for and why. What would you serve?

Jesus - because He has done so much for me. He has seen me through some really tough times. I would serve a Thanksgiving meal of Turkey, Spiral Sliced Ham, Lasagna, sweet potato casserole, mashed potatoes, gravy, cornbread dressing, macaroni and cheese, corn on the cob, fried okra, mustard greens, asparagus, squash casserole, green bean casserole, deviled eggs and cranberry sauce just like I serve to my family because they all tell me it's fit for a King.

Who would you most like to have prepare a meal for you?

100 years from now, how would you like to be remembered?

As someone who always had time for others and was always there when needed.

Great job Mama and interesting story too. Oh and the Roast Beef with mashed potatoes, turnip greens and pinto beans at Cracker Barrel isn't so strange as I've ordered it a few times myself.
 
Beautiful interview. Humble beginnings seem to make the strongest and most faith filled people.

There was a time in my life (not too long ago) when I would have been embarrassed to share my story with others but, as I've gotten older, I have come to the realization that you should live your life with no regrets. Change the things that you can. Accept your past and the things that you cannot change because you are the person that you are and are surrounded by all of the people that you love because of the life that you have led.

Mama, you have led quite a life. I have seen Tyler Florence twice at Fabulous Food shows and he is every bit as nice and genuine as you would expect. He is so proud of his baby daughter and was cute talking about her. He made a thanksgiving dinner at the Fabulous Food Show this year and he spoke about Food 911 being on the Food Network for 9 years. One little secret--I saw his show when he came to Shaker Heights, Ohio to teach someone how to make an apple pie--and I bet yours is better looking. I am sure his tastes great but that day, he made the sorriest looking pie. It happens even to the best every now and then. My mom even said something about it. He is one of those rare people who is just like he is on television and is a gentlemen. All the chefs like him.

There was a time in my life (not too long ago) when I would have been embarrassed to share my story with others but, as I've gotten older, I have come to the realization that you should live your life with no regrets. Change the things that you can. Accept your past and the things that you cannot change because you are the person that you are and are surrounded by all of the people that you love because of the life that you have led.

I have a plaque in my home jacked from my previous dentist's office...it was one of those inspirational things you can look at while you are in excrutiating pain. It says: At 20 you don't care what others think of you. At 40, you worry what others think of you. At 60, you realize no one was thinking of you at all.

Good for you, Mama!

As I told you when I first read this, Mama, I was moved beyond words. I always knew I liked and respected you and that you are bright and accomplished. But I didn't know so much about you, and your honesty and frankness truly humbled me. It reminds me of something I read about what a brave thing it is to live your life transparently. Thanks for being so transparent here. You made me feel honored and special by sharing this.
