My mother's marinade

I'm going to try to make this again soon.

The marinade can be frozen and reused. You can also reserve some, reheat it and use for sauce. Besides using it for chuck roasts, we've also mixed in a little with ground beef for hamburgers. Also, we have formed the hamburger patties, just beef, and marinated them for a few hours.

3/4 cup chopped onion
1/2 cup vegetable oil
2 T prepared mustard
3 T Worchestershire
2 tsp salt
1/2 tsp pepper
3/4 c ketchup
3/4 cup water
1/3 cup fresh lemon juice
3 T sugar

Simmer onions in oil for 15 minutes. Then add remainder of ingredients, stir, simmer for 20 minutes, stirring occasionally. Let cool before use.

Marinate roast for 3 to 5 days turning a couple of times a day. Remove roast and pat dry. Either discard or freeze remaining marinade for future use. Grill roast over medium heat until med rare to medium. Thinly slice and serve.

Be careful with the heat because the sugar in the marinade will char.

If you decide to mix some in hamburger meat and firm patties, be sparing because if you put in too much the burgers will fall apart.
