Mushroom Cheese Spread

8 oz. pkg. fresh mushrooms, coarsely chopped
1/2 cup Italian salad dressing
2 pkg. cream cheese, softened (8 oz. each)
2 cups (8 oz) shredded Monterey Jack cheese
1/4 cup finely chopped green onions
Chopped green onion to garnish
Crackers to serve

In a medium skillet, saute mushrooms in salad dressing over medium heat until most of liquid evaporates. Remove from heat; set aside. In a large bowl, beat cream cheese until fluffy. Beat in Monterey Jack cheese until well blended. Stir in mushrooms and 1/4 cup green onions. Spoon into serving container. Sprinkle remaining green onions on top. Cover and store in refrigerator. Serve with crackers.
 
Thats sounds awesome, will try for sure. What can i substitute the Monterey with, like what kind of cheese is it?
 
You could probably substitute a swiss or a colby for the Monterey Jack.
I think Monterey is a mild sort of nutty tasting cheese.
