Monday 1/16/2011 What's cooking?

🌹 Still trying to get it right.
I have whole split bone in chicken breasts. Not sure how I will cook them or sides at the moment.

Any plans?
 
Hubby just called from work & said he feels like takeout Italian tonight. Fine with me - no cooking!!!

So I told him to pick what he wants - either a pizza or sub sandwiches.

I just inherited about 2-3 hours of free time. Yay!!!

(Yes, I do LOVE cooking, but an unexpected "Get Out Of Jail Free" card once in awhile is always fun!)
 
I have some pasta that I froze awhile back. I think we'll have that tonight ... it's cold and snowy outside and comfort food will be good for the tummy and the mind.

unless I decide to make some soup...
 
well, the golden girls marathon is on so this calls for a quick meal. craving a steak. so that & some sunchokes, maybe. we shall see as the marathon progresses.
 
I'm about to start unpacking but want to make something... We spent a long weekend in cajun country so completely overindulged in just about everything.
I'm thinking of a salad topped with half a grilled chicken (we picked up lots and lots of meat, chicken and sausage from a great smoke shopped out there) and some frozen yogurt for dessert.

And wine. So what that tomorrow is a school day....:drink2:

Super Supper tonight..Compliments of the Lady "T" in the house.

Braised Pork Butt Steaks..with onions and nice potato wedges.

Had little Brussels Sprouts. Only three small pieces of bread. I'm cutting down on bread again. had to have it though to sop up the juices in the frying pan. :D

And what else but...More Doughnuts for dessert.

no steak for me! (no sunchokes, either- keeping those fer the steak). thawing it woulda likely made that a feasible dinner, huh.
(i got company & she stayed 'til slightly into my golden girls marathon so i forgot to). so it's chix tenderloins- wanna get those opened anyhow, & wrapped for the freezer, keeping 2 for dinner tonite. so maybe a chix sammich & a salad or something like that, w/ veggie juice to drink.

I used up leftovers and fried up ham slices that I had frozen from the Christmas ham.

Remember "Green Ham & Eggs"..??? ( Dr. Seuss Childrens storybook )

Mom made a ham one year, and glazed it with Green cheeries and cherry juice.
We ( brother and I ) wouldn't eat it!
We did manage to find some from the inside that was not green; but for some reason...Green Ham was not the thing in the 50's. I don't think there was a Dr. Suess! L O L
 
We had yesterday's chicken again tonight, but DW made rice tonight cuz the vagrants ate all the taters yesterday.:D

After dinner we packed the Italian sausages (DW cranked and I controlled the output and twisted the links, and now they'll stay in the garage fridge for two days before vacuum sealing and putting them in the freezer. I didn't want to waste my homemade bread to clean out the packer, so I just bulk packed the last 14 oz. in a freezer bag when I cleaned out the machine and tube. Salted down the rest of the casings for the next time and put them in the fridge.

I made open faced beef sandwiches with gravy from the leftovers last night.

Looks great Joe.
I like the hand crank machine the best. It's easier to control the feed into the casing.

Do you soak your casings in lemon juice?
 
i made my chix salad, differently than usual tho. i trashed my english cuke yesterday & haven't got celery so i used a sunchoke in it. also put a few cherub tomatoes in it & a few of my other usuals. forgot to put lettuce on the bread. the textural differences went well together.

salad, basically lettuce w/ a few of goodies in/on it. i used hazelnut oil/wht. balsamic peach vinegar on it- was curiuos to see how the peach went w/ the saltiness. it was so subtle. contrasted well.

dessert, just a snack-pack & cherries. whole milk to drink. can't have a sammich sans it. i forewent the veggie juice.

We didn't have the chicken. Hub and girls went out for a bit last night. They came home with Taco Bell. I had an egg.
 
Ok Then, I made Lasagna for dinner. Special request.

I used a new filling recipe. I thought I liked it until I started to make it. Then I found it "needed Modification". It was really well received. Too much for tow of us, so I portioned it off and froze the rest. Now we can make individual meals of the rest.

thx, there, jimmy! yeah- it's an 'iggle/market district item, the kind i got. the tag on it says it's from modena. (they bottle some imported oils/vinegars, usually @ the olive oil bar there @ thier stores.)
wasn't the golden girls tribute the best- my friend was over this afternoon & said there was a tribute on network tv that she watched, i think on nbc or one of those channels. missed it.
your dinner looks yummy, a comfort-food kinda meal. i'll take a few of those donuts, pleeze.
