I used up leftovers and fried up ham slices that I had frozen from the Christmas ham.
Looks great Joe.We had yesterday's chicken again tonight, but DW made rice tonight cuz the vagrants ate all the taters yesterday.
After dinner we packed the Italian sausages (DW cranked and I controlled the output and twisted the links, and now they'll stay in the garage fridge for two days before vacuum sealing and putting them in the freezer. I didn't want to waste my homemade bread to clean out the packer, so I just bulk packed the last 14 oz. in a freezer bag when I cleaned out the machine and tube. Salted down the rest of the casings for the next time and put them in the fridge.

I like the hand crank machine the best. It's easier to control the feed into the casing.
Do you soak your casings in lemon juice?
Looks and sounds great luvs!i made my chix salad, differently than usual tho. i trashed my english cuke yesterday & haven't got celery so i used a sunchoke in it. also put a few cherub tomatoes in it & a few of my other usuals. forgot to put lettuce on the bread. the textural differences went well together.
salad, basically lettuce w/ a few of goodies in/on it. i used hazelnut oil/wht. balsamic peach vinegar on it- was curiuos to see how the peach went w/ the saltiness. it was so subtle. contrasted well.
dessert, just a snack-pack & cherries. whole milk to drink. can't have a sammich sans it. i forewent the veggie juice.
