Mom's Zucchini Relish

10 c. chopped, unpeeled zucchini
4 c. chopped vidalia onions
1 large green and 1 large red bell pepper, chopped
5 TBL salt

After vegetables are chopped, place in a roaster.
put salt in and mix. Cover and let stand overnight in a cool corner of the cellar.
Next day, drain good, put in large colander and rinse good under cold water.
Drain good.

Syrup
2 1/2 c. vinegar
4 1/2 c. sugar
2 tsp. mustard seed
1 TBL turmeric
1 tsp. black pepper
1 tsp. dried hot pepper flakes

Mix all together in a large saucepan. Pour over vegetables.
Cook for thirty minutes; transfer to jars and seal in a hot-water bath.
 
My husband grandmother always made this. Her's is a little different, but, it is the most awesome relish. Pickle relish is just not good after eating this stuff, lol
