Mashed Potatoes with Roasted Garlic and Mozzarella

4 large idaho potatos
2 tbsp half and half
200g (a little less than 1/2 lb)grated mozzarella cheese
1 head garlic - use only half or more if you love garlic!
3 tbsp panko breadcrumbs
2 tbsp grated parmesan
1 tbsp chopped parsley
salt and pepper

Remove outer papery layers from head of garlic but leave whole. Wrap garlic in foil. Roast in oven for 1 hour at 350 degrees F.

Peel potatoes, halve and boil for 25 min. Do not cut up into little pieces as you will make the mashed potatoes watery.

Drain potatoes and add half and half while blitzing in food processor. Squeeze garlic out of skins into the mash, add mozzarella and add salt and pepper to taste. Blitz again.

Mix parsley, breadcrumbs and parmesan together. Season.

Pour into a greased baking dish and top with breadcrumb mix.

Bake in oven for 15 mins at 400 degrees F.
