Cake:
1 yellow cake mix
1 (11 oz) can mandarin oranges and juice
4 eggs
1/2 c oil
1 tsp vanilla
1/2 c coconut (optional)
Mix all ingredients with electric mixer for 3 minutes. Bake in greased and floured 9x13" pan at 325F for 30 to 40 minutes. Cool 10 minutes. Remove from pan and cool completely. Frost cooled cake.
Frosting:
1 (8 0z) carton frozen whipped topping, thawed
1 (20 oz) can crushed pineapple and juice
1 (4 serving) box vanilla instant pudding
1/2 c coconut (optional)
1/2 c chopped nuts (optional)
Combine the first three ingredients and mix well. Fold in coconut and nuts, if desired. Spread over cooled cake. Refrigerate 8 hours or overnight.
