Low Carb Taco Cabbage Skillet

Dinner in a flash!

1 lb lean ground beef (ground chicken or turkey works too)
5 c shredded cabbage or Cole slaw mix
1/2 medium onion, chopped
1 Tbsp dry minced onion
1 pck low carb taco seasoning (meaning no added sugar or use regular)
Hot sauce to taste
1/4 c water
1 1/2 c shredded cheddar cheese

In a large nonstick skillet with sides, brown ground meat until slightly pink still on medium heat. Do not drain unless you have an abundance of cooked off water and grease. Add fresh chopped onion and continue to cook until onions just begin to soften. Sprinkle taco seasoning in and mix until thoroughly combined and you can smell it. Sprinkle with your favorite hot sauce. Add cabbage, dried onion and water. Mix thoroughly. Lower heat to medium low and cover, stirring occasionally. When cabbage has cooked down to tender crisp, sprinkle shredded cheese on top and replace cover. Remove from heat until all cheese has melted.
Serve on its own, in low carb tortillas, on top of tortilla chips or tostadas.

1 c serving is 8.3 carbs, 5.4g Fiber, 2.8g sugar and 30g protein.
