1 c natural peanut butter, almond butter or sunflower seed butter - no sugar
1 1/2 c crispy rice cereal
2 tsp of pure maple syrup or agave syrup
1 c sugar free dark chocolate chips,
melted
Line of baking sheet with parchment or wax paper. In a large bowl combined peanut butter, cereal, maple syrup. Roll the mixture into 12 balls ( about two teaspoons each)
Place the prepared sheet pan into the freezer for 15 minutes. In the meantime, melt the chocolate chips.
After 15 minutes, take the balls out of the freezer and dip them into the melted chocolate and back onto the sheet pan. Place into freezer again until the chocolate is set, another 15 to 20 minutes. Serve immediately or place into a sealed plastic or glass storage container and place in the refrigerator until further use.
