Lorelei Spiro's Chocolate Chip Strudel
Ingredients:
3 cups sifted all-purpose flour
3 tsp. double-acting baking powder
1/2 tsp salt
1 cup pareve margarine
2 large eggs, well beaten
1/4 cup sugar
1/4 cup fresh squeezed orange juice
Filling:
1 cup chocolate chips
1 cup flaked coconut
1 cup chopped walnuts or pecans
1 jar strawberry preserves
1/2 cup sugar mixed with 1 tsp. ground cinnamon
Directions:
Sift flour, baking powder and salt into a bowl; cut margarine into the mixture until it is fine as meal. Add the beaten eggs, 1/4 cup sugar and orange juice. Mix to smooth dough. Divide into 4 equal parts. Roll out each part 1/2-inch thick. Spread with preserves, sprinkle with coconut, nuts, chocolate chips and cinnamon-sugar mixture. Roll up. Place with the cut edge underneath on a greased cookie sheet. Sprinkle the top with cinnamon and sugar. Bake at 350 degrees for 20 to 30 minutes or until browned. Cool and slice.
