Linguine with Grilled Clams and Chorizo

High Cheese

Saucier
The recipe is pretty simple but I opted for unconventional way of cooking it.

Ingredients:
1# box of linguine
about 3 doz littleneck clams
4 links chorizo
one can of white clam sauce - best quality available
1 cup of white wine
2 tablespoons sliced or minced garlic
juice from 1 lemon
3 tablespoons chopped parsley
1 teaspoon red pepper flakes
salt and pepper to taste

Basically, cook the chorizo, clams and pasta seperately and slice the chorizo. In a large skillet, heat some olive oil and sautee the garlic or a minute, add the red pepper flake and white wine. Continue to heat another minute to reduce the wine a bit. Add the linguine, clam sauce, clams (and any liquid from the clams if it's not too muddy), chorizo, parsley and lemon juice. Toss and finish with a drizzle of olive oil.

Cooking the chorizo and clams. You want nice color on the chorizo and you can add some white wine or water to the pan.

The cooked clams get moved to a cooler part of the pan

I usually purge the clams if I'm cooking them in the final product like a stew. For grilling I just clean them with a brush and toss them on the grates. For this recipe I used the pan for 1) there was alot of clams and 2) I was trying to reserve any liquid from the clams as long as it wasn't muddy. You can add mussels too.

I gotta get me some chorizo!

Looks great, HC!
