Lime & Cilantro Rice

1 cup long grain white rice
1 cup chicken broth
1 cup water
2 Tbsp chopped fresh cilantro
Juice of 1 lime
Drizzle of olive oil

Combine water, broth, rice & EVOO in a sauce pan. Bring to a boil then reduce to a simmer, cover stirring ocassionally for 15 - 20 minutes. When rice is nearly cooked, add cilantro and lime juice remove from heat and let stand covered for 5 minutes.

<Have yet to try this using brown rice. My guess is because of the additiona cooking time up the broth and water 1/4 cup each.>

Mr. GJ - is this similar to the rice they serve at Chipotle Grill? One of the best meals I had when I was in the US last month was at a Chipotle Grill in Washington, DC...funny to leave Mexico and go to the US to eat Mexican food. Maybe I was just homesick. Anyway, I had a rice bowl and it was yummy.

This sounds wonderful! Would love to make it tonight to go with our salmon, but I don't have any cilantro. Next time, for sure!
