Lilian Janis' Carrot Strudel

Ingredients:
5 cups flour
3/4 cup sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt (I use lots less)
6 eggs
1 cup vegetable oil
1 cup finely grated carrots
Filling:
Strawberry preserves
cinnamon, to taste
3 cups finely chopped walnuts
cinnamon and sugar
Directions:
Put all the ingredients listed in order into a mixing bowl; mix well. Let mixture stand for30 minutes. Divide dough into 6 parts. Roll out one roll at a time, very thin, on a floured board. Spread with strawberry preserves. Sprinkle with cinnamon and nuts. Roll up like a jelly roll. Sprinkle tops with cinnamon and sugar. Grease 13 x 9x 2-inch pans generously with oil. Bake for 45 minutes at 350 degrees.
