Lemon-Chicken Pasta Salad

I couldn't decide whether to put this in the chicken forum, the pasta forum or what, so I tossed a coin and it came up with salad. So here we go........I threw this together for our supper out on the patio last night.



1 box of Betty Crocker Suddenly Salad ranch and bacon pasta salad mix (I couldn't live without this stuff, it's great!)
1 cup mayonnaise
2 tsp. grated lemon zest
2 tbls. fresh lemon juice
2 cups of cooked, cubed chicken (I used a rotisserie chicken from the market to speed things up)
1 1/2 cups snow pea pods, strings removed, cut diagonally into 1/2 inch pieces.
1/2 cup sliced almonds (optional)
Leaf lettuce, if desired


Make Suddenly Salad according to package directions. In a large bowl, stir together lemon peel, and lemon juice and add this to pasta salad in bowl. Stir in chicken, pea pods and almonds. Serve chilled on lettuce leaves, with a dusting of paprika on top for garnish. You can also add fresh, halved, seedless grapes to the mix - this works, too. Chill any left over - it will keep for a couple of days in the fridge. Really good stuff. :chef:
 
Betty Crocker Suddenly Salad Ranch and Bacon Pasta mix is going on my grocery list. Sounds good!
