Lasagne ...

There are so many versions out there. My way of making it is to visit my sister. She is an exceptional baker but generally a middle of the road cook. However, her lasagna is amazing. She uses full-fat cheeses, creates a ground round/sausage mixture and basic pasta sauce. The top layer is mozzarella cheese. All is baked to bubbly perfection. I don't typically make it though, but she always makes an extra to freeze.
 
I'm making one mini soon (maybe tomorrow). I'll just divide/scale down to one mini pan.

How hard is Lasagne to make from scratch and what is needed?
Hey, it's not hard and it's worth the time and trouble. But there are a lot of different ways to make it. I'll look over some recipes and post one, though without even looking i know @lilbopeep posted a winner.

If you do a Search on Lasagna at the top of this page, you'll get at least 3 pages of posts on the subject, with many variations in recipes.

Or, a quick Google search on Classic Lasagna: https://www.allrecipes.com/recipe/156037/classic-lasagna/ I would use sliced fresh mushrooms.

To answer your question, it is not at all difficult to make lasagna from scratch IMO.

If someone has never made it before, it can be overwhelming to try to figure out which recipe to use. And not all recipes on Google turn out as expected.
 
Hey @The Ghan @lilbopeep did indeed post a good recipe. And you can always customize it, so if you and Toots don't like mushrooms just leave them out. Also if it's hard to find fresh herbs, just substitute dried. I know you're not in a very populated area so some things might be hard to find.

Thanks @Jusa and @lilbopeep did post a very helpful response and one that I am looking at closely and will print out. Like most things, thee are probably a million and one variations out there but I am sure the basics remain the same :)

Hey yeah, I wanted to mention that although it's not hard it can be time consuming. Sometimes I'll make the meat sauce the day before just to make it easier.
 
You can use any canned/bottled sauce that you like if you want. Also, you can leave out any of the additions that you don't want/don't like. Very customizable. That's why I started using the mini loaf pans (btw you can use the foil disposable pans). When I make them for myself and DD's, I make three all with different add-ins. One DD likes the plain basic cheese lasagna. I like all the add-ins like my mom made. My other DD likes some add-ins. It got crazy making a large pan and so much went in the garbage. The little ones are two servings.
