I purchased one of these systems (actually got reimbursed from the state as it was through a worker rehab program) for sharpening grafting knives at work and have been quite impressed. http://www.wickededgeusa.com/
Perhaps the cutlery officinados would care to weigh in on the product.

8 Diamond Stones, 2 each in 100, 200, 400 and 600 grits

This should yield about 1500 Japanese as the final grit, or approximately what you get when you buy a new Wusthof or any of its brethren. I didn't look too far into the site but if there is an option to get even finer grits I would take them up on it.
 
We ordered the option finer grit stones which go up to 1600 + there's a strap with diamond pastes. Wicked Edge might not be = to a professional sharpening job but it gets us amateurs close.
 
WickedEdge and Apex EdgePro are similar in their basic functional approach.

the EdgePro is more expensive - but you can get pretty much any kind of stone you want (various vendors, not all OEM supplied)
 
Most of those stones will soon be available for the Wicked Edge, too. Ken Schwartz has sent several Chocera stones, mounted to WE blanks, to Clay for testing. He was reportedly very pleased with them.
