Kneading Conference - 2nd day

Today was another informative day. My only complaint about the conference is that it was only 2 days and none of the workshops were repeated. i spent the morning in Richard Miscovich's presentation on baking in a WFO. He covered several interesting topics and the pictures show him making a batch of dough by hand that will yield over a dozen loaves. They were excellent.

After lunch I bounced around a lot again getting pictures of the progress with the mud oven and the brick oven. As you can see, the mud oven was finished with a coat of insulation and they were baking pizza in it.

I spent some more time with Roger Jensen, the stone cutter and got some pictures of a Meadows mill broken down with the stones exposed. The red paint he put of is used to detect high spots on the stones that can then be ground down so the two stones meet properly. Unfortunately, he had it back together when i got back to his booth.

Finally, there was a demonstration on using a scythe. When properly used, it's not as much work as we tend to think.

Tomorrow everything comes to an end with a "Bread Fair." No presentations, just bread samples, local cheeses and crafts open to the public. There's signs all over the town touting "Free Bread!" :)
